I was never a Pumpkin Spice fan until a good friend kept raving about it. I decided to try the flavored coffee last year this time at the coffee shop that was next to my day job back then. I was hooked. It became my way to escape from the crazy work each day and the sugar was SO good. It seemed the warmth and caffeine recharged me each day. Until I needed to detox, literally, from it! Oh boy that sugar crash was terrible and I VOWED that day that I would never continue to ingest the swirls and pumps these coffee shops tend to flavor their coffee with and find alternatives. So while I still enjoy one on an occasion, I am finding other ways to satisfy my autumn desires. Here is a great one!
PUMPKIN SPICE BALLS
¾ cup all-natural smooth almond butter
¼ cup pure pumpkin puree
¼ cup raw honey
¾ cup dry old-fashioned rolled oats
3 scoops Vanilla Shakeology
1 tsp. pumpkin pie spice
1. Combine almond butter, pumpkin, honey, oats, Shakeology, and pumpkin pie spice in a medium bowl; mix well with clean hands or a rubber spatula.
2. Shape mixture into twenty four walnut size balls; place in airtight container.
3. Refrigerate for at least 1 hour before serving.
